Homemade Ravioli Dough

Homemade Ravioli Dough

This is a very simple recipe made with all purpose flour. No machine since I do not own one, only a rolling pin.

 

all purpose flour 1.5 cups

2-3 eggs

salt 1/4 teaspoon

room temperature water 2-3 teaspoons

In a food processor add flour, 2 eggs, and salt. Process until dough starts to form. Add water and additional egg if dough is to dry. Dust a cooking surface with flour and kneed your dough into a ball for 1 to 2 minutes. Cover dough with plastic wrap for 30 minutes. Now cut your dough into 2 equal parts. Using a rolling pin roll dough out into 2 equal sections, your top and bottom.

Use a filling of your desire and add to the bottom pasta sheet. We used a Beef and Cheese mixture.

Place your cover over bottom and with a pizza or pasta cutter, cut into 12 large raviolis. I use a fork around the ravioli to seal well. Boil until tender and serve with your favorite sauce. Enjoy, Jason!

Our Family came to visit… What started as a blog- and grew into a Catering Company and then the “Underground Food Truck”. Had many amazing customers… Working at the Winery’s we met people vacationing in the Poconos from around the world… A little Truck- Great Food- Great People- Great Memories…

The “Underground Food Truck” was sold last week… This is the last chapter of this story for now… This web site ends at the end of 2017… Fun it was. For now I will focus on bigger things for the future…

Too many of my recipes are for multiple dough balls. So here is the perfect recipe for just one Pizza Dough Ball and your Bread Machine can do all the work…

3 cups high gluten flour or bread flour

1 teaspoon fast active yeast

2 teaspoons sugar

1 teaspoon olive oil

1 teaspoon salt

1.5 cups warm water

Place all ingredients in bread machine, water last. Then press the dough cycle. Set it and forget it… The perfect Single Pizza Dough Ball…

Currently I am very happy with my new job, I will be looking to interview experienced Food Handlers to run my Truck for the Spring and Summer Season… Actually ending in mid-Fall. Must have food service experience and a driver’s license. Possibility’s are endless for a┬áCulinarian that wants to take on the new Food Truck World. Currently we have three days on a Golf Coarse and weekend winery tours with the Pocono Wine Trail. Unfortunately for those that follow the “Underground” Food Truck our water pump went last week and we canceled the event. Once again, Unfortunately the water pump came in today with the wrong fittings and we will have to cancel Hollowine weekend. We are bummed out about this. Our new water pump should arrive next week and we will have our final two events for the season at Tollino Vineyards in Bangor, PA. Hope to see you there. Thanks, Jason…

We are terribly sorry to say the “Underground” Food Truck will have to skip out on today’s event due to a repair that wont be made on the truck until early next week….

We will be at Hollowine Weekend at Mountain View Vineyard next Saturday and Sunday…

We really wish we could be at this event, but I’m waiting for a part for our water pump that wont be fixed for today’s event…
