Crusty French Bread

bread flour or high gluten flour 3 and 1/2 cups

sugar 1 tablespoon

salt 1 teaspoon

fast active yeast 2 and 1/4 teaspoons

warm water 1 and 1/2 cups

canola oil 2 tablespoons

In a Kitchen Aide using the dough hook, add flour, salt, and sugar. Place yeast in small bowl and add 1 tablespoon of warm water. Make a slush. Add all the yeast with a rubber spatula. Add warm water and start to mix on low gradually mixing to medium speed. When mixed, take the dough hook off and with your hands mix dough to make a ball. In a glass bowl, spray with baking spray and add your dough ball. Spray the top of the dough ball with cooking spray and cover with a warm moist paper towel. Example below.

After one hour when dough has doubled in size take out and place on a floured cooking surface. Cut the dough in half and roll into 2 French Loafs. Example below.

Make six bias cuts on the bread. Mix one egg white with one  tablespoon of cold water and use a pastry brush and to coat both loafs.  Bake in the oven on 375 degrees for 25-30 minutes.
