Anadama Bread

New England Anadama Bread

water 1 cup (split)

butter 2 and 1/2 tablespoons

yellow cornmeal 1/4 cup

grandma’s molasses 1/2 cup

fast active yeast 2 teaspoons

all-purpose flour 3 cups

salt 1 teaspoon

In a sauté pan add a 1/2 cup of water and place on medium heat. Bring to a boil and add corn meal. Lower heat to low and whisk. When the corn meal turns pasty add the butter and molasses and take off stove. Whisk it all together and let rest.

In a Kitchen Aide add 1/2 cup of water and yeast. When yeast dissolves about 10 minutes add 2 cups of flour, salt, and your corn meal mixture. Using the Hook knead the dough on low and gradually add the last cup of flour. Examples below.

On a clean cooking surface add flour. Take the dough and knead it into a loaf. Add to a baking pan sprayed with baking spray. Cover with a wet paper towel for 1 hour to rise. Cook for 30 minutes at 375 degrees. Thanks Baker Pippi.
