“Chicken Teriyaki and Grilled Onions Lo Mein”

Ok so every family has busy nights if you have kids. Well my “Quick Dinners or Crock Pot” categories is perfect for that 30 Minutes or less dinners from home. This recipe Feeds 4-5.

Chicken Teriyaki and Grilled Onions Lo Mein

lo mein noodles 1 package produce department

raw chicken breasts 3/4 pound

onion 1/2 sliced round 1/4 inch and gridded

chicken broth 1 cup

garlic 2 bulbs peeled and crushed then chopped

butter 1 tablespoon

oil 1 teaspoon

teriyaki sauce 1 tablespoon

soy sauce 1 teaspoon

green onion 1 chopped

basil 3 leaves chopped

water 2 tablespoons

cornstarch 1 tablespoon with one table-spoon of warm water to add to boiling chicken broth to thicken

Lets start with quick marinate for the chicken. Cut chicken breasts in half through the middle from the side. Place in a bowl. Add the following ingredients:

olive oil 2 tablespoons

teriyaki sauce 2 tablespoons

soy sauce 1 teaspoon

salt and pepper for taste

granulated garlic 1/4 teaspoon

onion powder 1/4 teaspoon

Mix well and add Chicken Breasts and marinate for 20 minutes. Pictures below of griddled onions and chicken.

Cook your Chicken and Onions and set aside.

Time to Cook the Lo Mein. Place a pot of water on medium heat. Add 1 tablespoon of Soy Sauce, 1 teaspoon of Salt, and one tablespoon oil. When water boils add pasta. Cook al dente. Shock with cold water and coat with oil so it does not stick. Example below.

Chicken Broth:

Heat on the stove on medium heat and when boil comes add cornstarch slurry and mix well. Shut off.

Anyway…

Julienne cut your cooked chicken breasts. They should be fully cooked to 160 degrees. Place oil and butter in large sauté pan on medium heat. Add garlic. When it starts to brown add onions. (I cut onions in half so they weren’t so big, they grill better in rings) Before garlic burns add soy sauce and teriyaki sauce. Add chicken broth with 2 tablespoons of water. Add chicken and any au jus that it created after being cut. Place cooked noodles on top and cover for 2 minutes. Uncover and mix well and continue this process until your liquid is almost gone. Serve on a Serving Dish and Enjoy! Jason.

Last week we cut Eggplant long way’s for Rollatini. This week we will cut them in 1/2 inch circles for sandwiches.

Recipe will be for 4 Sandwiches

eggplant 1 skinned and cut into 1/2 inch circles, approximately 9

roasted peppers 4 half’s Julienne cut

Fresh Mozzarella Cheese 1 large ball 12 cuts

balsamic dressing drizzled on both sides of the bread

baguette 1 large cut in 4

You can buy all these ingredients in the store. Even the eggplant in the frozen isle. I will put all my links underneath to make this whole sandwich from scratch including the bread. Enjoy, Jason

Ok, so today all we think about is a great BBQ Grilled Ribs, not smoked or falling off the bone… What ever happened to slow grilling the Ribs to perfection? Not fall of the bone, but tasty and tender… My family’s live by this old style Rib…

Pork Ribs 1 rack cut in half and tope bone removed

salt and pepper for taste

granulated garlic 1/2 teaspoon

onion powder 1/2 teaspoon

baking spray

Clean the top bone off your Ribs. Keep the middle chain for grilling. Cut Rack in half. Place grill on 300 degrees. Make the grill come to 300 degrees before using it, spray grill with cooking spray. Place Ribs on grill and season with half the above seasonings. Close grill. After 10 minutes flip ribs and season with the last half of the seasonings. Close Grill. Continue to flip Ribs every 10 minutes for 45 minutes to make a slow roast…

When Ribs are tender start to baste ribs with BBQ sauce. Lower Grill to 250 degrees…

When tender and cooked, place on a cutting board and cut, serve with Rice Pilaf or Roasted Potatoes… Enjoy, Jason….

Jule’s nice and easy Breakfast Burritos

Jule’s nice and easy Breakfast Burritos

Ok so no joke, my daughter hates the food at school, so she woke up early and made the family breakfast burritos… For 2 people

flour tortilla shells 7 inch- 2

eggs 4

milk 1 tablespoon

bacon 4 slices

Mexican Shredded Cheese Blend 6 oz.

Fresh Salsa 2 tablespoons

cooking spray

Beat eggs and milk together. On a hot griddle at 325 degrees cook your bacon strips. Chop bacon and let grease absorb in paper towel. Clean Griddle and spray with cooking spray. Warm both tortilla shells on each side. 20 seconds for each side and take off. Clean griddle again and spray with cooking spray. Place temperature to 300 degrees. Cook mixed eggs well, folding as the cook. Take eggs off.

Time to Build your Burritos, place equal parts of egg, bacon, salsa, and cheese to each warm wrap. Fold over, the sides in. Finish the roll. You are now ready for Jule’s Breakfast Burritos.
