Unfortunately for those that follow the “Underground” Food Truck our water pump went last week and we canceled the event. Once again, Unfortunately the water pump came in today with the wrong fittings and we will have to cancel Hollowine weekend. We are bummed out about this. Our new water pump should arrive next week and we will have our final two events for the season at Tollino Vineyards in Bangor, PA. Hope to see you there. Thanks, Jason…

We are terribly sorry to say the “Underground” Food Truck will have to skip out on today’s event due to a repair that wont be made on the truck until early next week….

We will be at Hollowine Weekend at Mountain View Vineyard next Saturday and Sunday…

We really wish we could be at this event, but I’m waiting for a part for our water pump that wont be fixed for today’s event…

Casa Rub- Consists of Paprika, Chili Pepper, Cumin, Montreal Steak Seasonings, Salt, Pepper, Onion Powder, Garlic Pepper, Cayenne Pepper, and Sugar.

Pan Seared Sirloin Steak with Sautéed Shrimp with Linguini in White Clam Sauce…

Feeds 4-6 people

Sirloin Steak 1.5 ponds

Marinate:

olive oil 2 tablespoons

soy sauce 1 tablespoon

minced fresh garlic 1 teaspoon

salt and pepper heavy for tendering and taste

onion powder 1/4 teaspoon

blended garlic and white pepper grinder 1/4 teaspoon freshly ground

Chopped Parsley and Basil 1/4 teaspoon

Season both sides of the steak and use a fork to tendering the meat. Allow 30 minutes to let meat to rest and marinate. Picture below.

Fresh Shrimp 3/4 pound 21-25 per pound

peeled and deveined with tail off.

olive oil 2 tablespoons

minced fresh garlic 1 teaspoon

salt and pepper for taste- lite

crushed red pepper flakes 1/2 teaspoon for a bite

(Optional)

Mix and let marinate 30 minutes. Picture below.

Pasta-

thin linguini- 3/4 pound

fresh clams chopped with juice 1 cup

chicken stock 1 cup

salt and pepper for taste

oregano 1/8 teaspoon

fresh chopped basil and parsley 1 tablespoon

olive oil 1/8 cup

fresh chopped shallots 1 teaspoon

fresh chopped garlic 1/2 teaspoon

butter 1 tablespoon

white wine 1/8 cup

In a large sauté pan add oil on medium heat. When pan is starting to lightly smoke add shrimp, butter, shallots, and garlic. Sautee quickly and move ingredients, before butter and garlic browns add white wine to deglaze. Add Chicken stock and bring to a boil. When boil starts simmer for 10 minutes with clams and juice. In a stock pot add water to boil for linguine. Cook till tender. Drain and add to Clam Sauce. Bring back heat to coat the pasta. Serve…

Add Cast Iron Skillet to stove on Medium to High Heat. When smoke starts sear Steak for 3 minutes on both sides. Finish steak in oven at 425 degrees until steak is cooked to your liking. For Medium Rare should only take 3-4 minutes. Take out at 125 degrees and let sit till it hits 135 degrees. About 5 minutes for rest. Serve with Pasta. Enjoy, Jason!

The “Underground” sold its first Sushi today at Mountain View Vineyards in Stroudsburg. I am proud to say my Sushi Chef is my 12-year-old Daughter Julianna Marie Mihalik. We are only serving cooked rolls, keeping it safe. California Rolls, Cucumber Rolls, and Avocado Rolls. She kicked some butt today!!! Thanks Baby!
