Pot Roast for Family’s on the Run… Crock Pot

pot roast

bottom round 2 to 3 pounds

onion soup mix 1 pack

water 3 cups

beef bouillon cube 1

salt and pepper taste

granulated garlic 1/2 teaspoon

parsley 1 teaspoon

onion 1/2 diced

carrots 4 sliced or diced

celery sticks 3 diced

potatoes 4 peeled and cut

In a Crock Pot add water, beef bouillon cube, seasonings, vegetables, and Onion Soup mix. Set roast on top and pick slow cooking for 8 hours or 4 hours on fast. Serve with Egg Noodles and Enjoy!

Orange Glazed Turkey Breast

boneless turkey breast in netting. (BJ wholesale or Cosco Foods)

salt and pepper taste

onion powder 1/2 teaspoon

granulated garlic 1/2 teaspoon

3 tablespoons orange marmalade

2 teaspoons soy sauce

Rub Turkey Breast with seasonings. Cook till temperature is 160 degrees. Take out and let rest 15 minutes. In a sauté pan add marmalade and soy sauce. Reduce on low temperature till thickens. Add glaze to Turkey Breast. Let glaze set for five minutes. Carve and Enjoy!

Homemade Guacamole

Great Sunday Football starter. This is my wife’s recipe.

avocado’s 4 peeled

limes 2 freshly squeezed

Sriracha 1/2 teaspoon

kosher salt 1 1/2 teaspoon

freshly chopped cilantro 2 teaspoons

cumin 1 teaspoon

chili powder 1 teaspoon

onion powder 1 teaspoon

granulated garlic 1/2 teaspoon

black pepper 1/2 teaspoon

tomato 1 diced

In a mixing bowl add all ingredients and use a mashed potato utencil to mash. Blend well and Enjoy!

Quinoa Salad

GLUTEN FREE

quinoa package 5.46 oz.

carrot 1 shredded

cumber 1 diced

apple red delicious diced

celery 1 stick diced

honey 2 tablespoons

balsamic vinegar 2 table spoons

olive oil 4 tablespoons

salt and pepper taste

Italian seasoning 1/2 teaspoon

onion powder 1/2 teaspoon

granulated garlic 1/2 teaspoon

parsley 1 tablespoon

Ok so this is a room temperature salad. Quinoa is a great Gluten free food. Very healthy…. Ok so lets add a pot of water on the stove on medium to high heat. Add 1/2 teaspoon salt. When boiling add package of Quinoa. Boil the Quinoa as if its pasta 9-11 minutes. When cooked drain and cool. Add to mixing bowl. Add all ingredients and mix thoroughly. Pack Quinoa in a small coffee cup and and turn upside down on a plate and serve. Enjoy!

Sausage Bread

Pizza Dough for Home

ground sausage 1/2 pound

pizza dough recipe on my site

mozzarella cheese 3/4 pound

olive oil 2 tablespoons

Italian seasonings 1 teaspoon

parmesan cheese 1 tablespoon

baking spray

Make your dough and let rise for 1 hour. Clear a working area and dust with flour. Add your dough to table and dust with flour. Work dough as if making a pizza.

open sausage rollAdd Sausage and Mozzarella to middle. Roll into stuffed bread like rolling a wrap sandwich. Make sure sides are sealed.

rolled sausage breadSpray cooking spray on a baking pan. Place Sausage Bread on top. Use olive oil to coat bread. Add Italian seasonings and parmesan cheese to top bread. Cook at 375 degrees till cooked. Let the bread rest for 15 minutes before cutting. Enjoy!

Mai Tai

My favorite Cocktail. Back when I lived in Paramus, NJ, we knew a bartender named Tony. He shook so many of these cocktails every night that he needed to ware an Ace Bandage  on his wrist. LOL.

light rum 1 1/4 oz.

dark rum (Myers) 1 1/4 oz.

orange liqueur 3/4 oz.

sour mix 1 oz.

grenadine 1/2 oz.

pineapple juice 3 oz.

Yummy- it tastes like Heaven….

In a shaker add all ingredients and shake. Pour over ice in a cocktail glass. Garnish with Cherry and Pineapple. Enjoy!

Sausage and Beef Meat Sauce

Sausage and Beef Meat Sauce…

sausage meat not in casing 1/2 pound

beef chop meat 3/4 pound

onion 1/2 chopped

garlic chopped 1 tablespoon

red wine 1/4 cup

white wine 1/4 cup

olive oil 2 tablespoons

crushed tomatoes can 28 oz.

diced tomatoes can 28 oz.

tomato paste 8 oz.

water 1 cup

parsley 1 tablespoon

salt and pepper taste

1/4 teaspoon red pepper flakes

1 whole rind from 1 wedge Parmesan, optional but so worth it

dry thyme 1/2 teaspoon

Italian seasonings 1 tablespoon

onion powder 1 teaspoon

granulated garlic 1/2 teaspoon

sugar 2 tablespoons

thick spaghetti 1 pound

In a sauce pan sauté sausage on medium heat. Brown and chop. When cooked take out and add beef chop meat. Brown also. When cooked drain in a colander. Put sauce pan back on stove on medium heat and add olive oil, chopped onion, and garlic. Sweat and add tomato paste. Stir rapidly to break up tomato paste. Add red wine to deglaze. Continue to stir to liquefy the tomato paste. Add both cans of tomatoes and water. Add Sausage and Beef. Add all seasoning except parmesan cheese. Stir every 10 minutes. Let simmer on low for 45 minutes to an hour.

Add pasta pot to the stove filled with water and teaspoon of salt. When sauce is finished add pasta. Cook 7-9 minutes till liking. Drain pasta and olive oil lightly so it does not stick. Portion your plates and top with sauce. Garnish with Parmesan cheese and fresh Italian Parsley. Enjoy!
