Breakfast Frittata with Bacon, Broccoli, Cheddar Cheese, and Home Fries



Breakfast Frittata’s- Gourmet Omelets usually with Potato or Pasta of some kind. This morning we made a Broccoli, Bacon, Cheddar, and Home Fries Frittata…

Home Fries:

peeled white potatoes diced and skinned 1 cup par-boiled

onion 1 tablespoon diced fine

red bell pepper 1 tablespoon diced fine

butter 2 tablespoons

salt and pepper for taste

onion powder 1/2 teaspoon

parsley 1/2 teaspoon

On a flat griddle add your butter, potatoes, onion, pepper, and seasonings. Brown on both sides. When cooked set off to the side.

broccoli 1 small head cooked and shocked and cut in small florets

shredded cheddar cheese 1/2 cup

baking spray

Egg Mixture:

eggs 6

heavy cream 2 tablespoons

grated parmesan cheese 1 tablespoon

salt and pepper for taste

paprika 1/2 teaspoon

parsley 1/2 teaspoon

Whip eggs with all ingredients well. Example of all ingredients below.


Turn oven on 350 degrees. In a 10 inch Cast Iron pan spray well with baking spray. Add egg mixture, then toppings spreading all ingredients evenly. Top with grated cheddar cheese. Bake 20-25 minutes or until fluffy and cooked. Enjoy, Jason.


Baker Pippi’s Perfect Pancakes

This is a Classic recipe in our House…

all-purpose flour 1 and 1/2 cups

baking powder 3 teaspoons

salt 1 teaspoon

sugar 1 tablespoon

vanilla 1/2 teaspoon

cinnamon 1/4 teaspoon

milk 1/2 cup

egg 1

butter melted 3 tablespoons

In a large bowl, sift the flour, baking powder, salt, and sugar. Add milk, egg, and butter. With a whisk combine all ingredients. Last add vanilla and cinnamon and whisk in. Use a flat griddle for best results, on 325 degrees. Thank you Baker Pippi, enjoy.

Cinnamon Rolls


The kids are off from School today so this was our Breakfast. I believe this was the first recipe I was introduced to in Culinary School. Its 3 parts, took one hour total prep time, cooked for 30 minutes longer and made 9 nice size Buns.


all purpose flour3 1/2 cups

warm water 1/2 cup

warm milk 1/2 cup

egg 1

salt 1 teaspoon

fast acting yeast 1/4 ounce. (1 package)

sugar 1/4 cup

butter melted 6 tablespoons

Add yeast to warm water and activate. Add flour to kitchen aide bowl. Add egg, sugar, salt, milk, and butter. Turn mixer on low using the dough hook. Add warm water with yeast to mixture. Mix on Medium till dough ball is formed. Cover for 45 minutes with warm paper towel. When proofed roll out on a clean surface. Example below.

Sugar Mixture-

butter- 1/2 a cup

sugar 3/4 cup

cinnamon 2 tablespoons

Brush the dough with melted butter. Save some for bottom of pans. Mix cinnamon and sugar and top the dough with it. Save some for bottom of the pans.

Roll the Dough up.


Cut into 9 buns. Add left over butter and sugar mix to the bottom of pans. I fit 6 in one pan and 3 in another. Cook at 350 degrees for 30 minutes. Take out of the oven and make the glaze and pour it over your warm buns.

Easy Homemade Granola


3 cups rolled oats

1 cup shredded coconut

2 1/2 tbsp. dark brown sugar

2 tablespoons honey

2 tablespoons canola oil

1 teaspoon salt

optional: 1 cup nut of choice, chopped

optional: 1 cup dried fruit of choice, chopped

1 tbsp. wheat germ

Preheat oven to 250 degrees F. In a large bowl, combine the oats, nuts, coconut, wheat germ and brown sugar. In a separate bowl, combine honey, maple syrup, oil and salt. Combine both mixtures and pour onto a sheet pan. cook for one hour stirring every 15 minutes to achieve an even color. Remove from oven, stir in dried fruit. Store in airtight container. This is wonderful over yogurt!
