Baker Pippi’s Easy “Chocolate Chip Muffins”

2 cups flour

1/3 cup light brown sugar

1 cup sugar

1 tbsp. baking powder

1/2 tsp salt

1 cup milk

1/2 cup butter, melted

2 eggs

1 1/2 tsp vanilla

1 1/2 cups chocolate chips

Preheat oven to 400 degrees. Spray a muffin pan with baking spray.

Stir together flour, sugars, baking powder and salt. In another bowl stir milk, eggs, butter and vanilla. Make a well in center of dry ingredients and add the milk mixture. Stir until combined, add chocolate chips and stir gently.

Scoop mixture evenly into muffin pan. Bake for 20-25 minutes. Makes 12 regular muffins or 6 large muffins.

S’mores Dip



My Son Matt had an idea about a S’mores Dip. I let him run with it…

In a 9 inch glass pie plate spray with cooking spray, add 1 Hershey’s chocolate bar broken up on to the bottom of the glass pan. Fill the gaps with 1/2 cup of semi sweet chocolate chips. Add marshmallows to the top. Example will be below. Place in the oven on 325 degrees for 10 minutes. Change over to Broil till Marshmallows are golden brown. Take out and garnish with cinnamon, serve dip with Graham Cracker squares. Thanks Matt. Enjoy!

can apple filling 21 oz.

package of Pillsbury Grand Biscuits 16.3 oz.

sugar for taste

confectionary sugar for taste

egg 1 for egg wash

This is such an easy recipe for dessert from home for anyone. Flour a clean cooking surface. Place each biscuit out, and flour the top. With your hands spread the biscuit flat. With a rolling-pin work it out about 5 inches in diameter. Example below:


Egg wash the outside ring and place a heaping tablespoon of Apple Filling in the middle:


Fold over and fork seal the egg wash…


Trim the edges with a pizza cutter. Refrigerate for 30 minutes to set. Deep Fry at 350 degrees. Brown on both sides. Sprinkle sugar over the top while hot. When ready to serve sprinkle confectionary sugar on top. Thanks Baker Pippi!


Homemade Brownies from Scratch



This is Baker Pippi’s Birthday Cake Tonight:

I’m not a great baker, but I make good dough… Don’t ask me why?

butter melted 1/2 cup

sugar 1 cup

eggs 2

unsweetened cocoa powder 1/3 cup

all-purpose flour 1/2

salt dash

baking powder 1/4 teaspoon


butter 5 tablespoons melted

unsweetened cocoa powder 5 tablespoons

confectioners sugar 1 cup

vanilla extract 1 teaspoon

garnish 1/4 cup chocolate chips and sprinkles of your choice

Batter Directions:

In a mixing bowl combine your ingredients minus the eggs and start to mix by hand with a whisk. Add one egg at a time and whisk until blended smooth with no lumps. Grease a glass pie shell and add mixture to it. Bake at 350 degrees for 25-30 minutes. Let it set for 10 minutes before adding frosting. Add frosting and sprinkles and bake again for 5 minutes. Take out of the oven and garnish with chocolate chips. Enjoy, Jason.

Sweet Bread Pudding

Day old cut pastry (Danish, Croissants, Donuts, Muffins) 8 cups chopped. You can add then to your freezer until you have enough.
 Heavy Cream 1 quart
 Eggs 12
 Sugar 2 cups
 Salt 1 teaspoon
 Vanilla 3 tablespoons
Nutmeg 1 teaspoon
 Cinnamon 2 tablespoons
In a Large bowl mix all ingredients except for pastry into a custard. Break up all pastry into pieces and put in a full aluminum pan sprayed with baking spray…pour custard over pastry. Make sure the pastry absorbs the liquid.
Cook 350 degrees until tender…30-45 minutes. Serve with whipped cream.

Chinese Spareribs

This was a nice treat, we served it with with Chicken and Broccoli and Plain Lo Mein, we will post the Chicken recipe tomorrow.

hoisin sauce 4 tablespoons

ketchup 1 tablespoon

grenadine 2 oz.

soy sauce 1 tablespoon

fresh chopped garlic 1 teaspoon

white vinegar 1 teaspoon

lemon juice 1 teaspoon

Chinese five-spice powder 1 /2 teaspoon

St. Louis Ribs 1 rack cut in half

Make the marinate and pour in a glass baking dish. Place ribs in sauce on both sides and let marinate for 1 hour. Place them on a wire rack in a baking pan. Set oven to 350 degrees. Pour 1 cup of water under the wire rack. Make sure water is not touching the rack. Place Ribs on rack for 1 hour. Continue to brush them and turn them over every 15 minutes with left over sauce. Broil for 5 minutes or to brown after the hour is over. Enjoy, Jason!







Biscotti for after Dinner, with our Friday after Dinner Drink. Link will be on the bottom of the page. This is a great recipe, we made it a few times. Great treat with Coffee. This is a basic recipe but you can do different spins on it by adding nuts or dried currants or dipping the ends in chocolate. 

2 cups all-purpose flour

1 1/2 tsp baking powder

3/4 cup sugar

1 stick of unsalted butter, room temperature

1/4 tsp salt

2 large eggs


Preheat oven to 350 degrees F . Line a baking sheet with parchment paper. Whisk flour and baking powder in a medium bowl to blend. With a mixer, beat sugar, butter and salt until blended. Beat in one egg at a time. Add the flour mixture and beat until blended—do not over beat this will make the dough tough. Form the dough in a 13″ long 3″wide log on the baking sheet. Bake until golden about 40 minutes. Cool for 30 minutes. Place log on cutting board, using a sharp serrated knife cut on a diagonal into 3/4″ thick slices,  arrange cut side down on baking sheet…bake an additional 15 minutes.

Chocolate Cake with Marshmallow Frosting

Chocolate Cake
1 3/4 cups all-purpose flour
3/4 cup sugar
2/3 cup light brown sugar
1 tbsp espresso powder
1 1/2 tsp baking soda
1/4 tsp salt
1 cup cocoa powder
3/4 cup butter, at room temperature
2 eggs
1 1/2 tsp vanilla extract
1 cup buttermilk, at room temperature
1/2 cup sour cream, at room temperature
Marshmallow Frosting (recipe follows)
Preheat oven to 350 degrees F. Butter two  inch round cake pans. Line with bottom with wax paper, butter the paper and dust the paper with flour. In a medium bowl sift together, flour, cocoa, espresso powder, baking soda and salt. In the bowl of an electric mixer fitted with paddle attachment, cream the butter and sugars. Add the eggs and vanilla, mix well. Combine buttermilk and sour cream. On low-speed add the buttermilk mixture and flour mixture alternately. Mix the batter until well blended. Be careful not to over mix. Divide the batter between two pans, smooth tops with a spatula. Bake on middle rack of oven for 25-30 minutes or until a toothpick comes out clean. Cool for ten minutes, remove from pans. Cool completely before frosting.
Marshmallow Frosting
1 and 1/2 cups butter
2 cups powdered sugar
1/2 tsp vanilla
16 ounce jar of Fluff
Cream butter in a mixing bowl with an electric mixer on  until butter is soft and fluffy. Gradually beat in confectioners’ sugar; beat in vanilla extract. Gently fold the marshmallow crème into the frosting until thoroughly incorporated

Baker Pippi’s Apple Crumb Coffee Cake



Baker Pippi was back in the lulabelleskitchen.com today. (kitchen)We missed her. That’s her site address if your interested checking it out!!! This is a fantastic simple recipe. I was lucky enough to sample it!!!


unsalted butter 1 stick plus 2 tablespoons

light brown sugar packed 1 and 1/2 cups

eggs 2

all-purpose flour 2 cups

baking soda 1 teaspoon

cinnamon 1 and 1/4 teaspoon

salt pinch

sour cream 1 and 1/4 cup

vanilla extract 1 teaspoon

pie filling apples 1 can 21 oz.

Add softened butter to Kitchen Aide or mixing bowl. With the whip cream butter and sugar. Add 1 egg at a time. Mixing on low-speed, add vanilla extract, and sour cream. Add salt, baking soda, and cinnamon. Last slowly add all the flour and blend smooth. Remove bowl from the Kitchen Aid and fold can of Apple pie filling in the mix. Pre-heat oven to 350 degrees. Lightly grease a 13 x 9 glass baking dish with 2 teaspoons of melted butter. Add Mixture. Time to make the Crumble…

all-purpose flour 1/2 cup

butter softened and cut into small pieces 4 tablespoons

cinnamon 3 tablespoons

Mix well with hands so the butter stays small in crumble pieces. Add to the top of the cake mixture. Bake 35-40 minutes or until cake is cooked. Enjoy and thanks Baker Pippi!



Easy and Fast Coffee Cake



Baker Pippi finally made us our Easy and Fast Coffee Cake… Just took 3 days? Just kidding. It cooks in 15-20 minutes and prep time is an additional 10 minutes. Actually Baker Pippi has been very busy so my 11-year-old Jules made her recipe…


all-purpose flour 1 and 1/2 cups

baking powder 1 and 1/2 teaspoons

sugar 6 and 1/2 tablespoons

shortening 1/3 cup

salt 1/2 teaspoon

milk 1/2 cup

egg 1

vanilla extract 1/2 teaspoon

In a Kitchen Aide place all the above ingredients. Using the whip turn on slow to cut the shortening. Place cake mixture in a round 9 inch baking pan. Pre-heat oven to 425 degrees.

light brown sugar 4 tablespoons

cinnamon 1 teaspoon

Mix all these ingredients by hand with a whip so the butter stays in small chunks. Sprinkle on top of cake mixture by hand. Bake for 15-20 minutes. Enjoy!! Thanks Baker Pippi and Julianna!!!
