Going Sicilian at Casa

Going to California…. but first taking a plane to Sicily….

Well the kids do not care for Shrimp, so we took out the old Sicilian pan and took the kids to where there Grandmother and Great grandmother were born. Sicily…

We let this pie proof in the pan with olive oil for nearly 4 hours….

The kids were rewarded for their patience….

First your gonna want to make dough. Follow the link Below… Always use high gluten flower if you can find it.

Pizza Dough for Home

Cook six 3 oz. Cheese Steak portions, Chop them as they cook. Add salt and pepper for taste. Add 1/2 teaspoon Italian seasonings, and 1/2 teaspoon of parsley. Let the meat cool for 5 minutes. Spin your dough out like a pizza, add 3/4 pound of shredded mozzarella cheese, and your seasoned steak. Roll the Stromboli/Bread up.

Put oven on 375 degrees. Spray baking sheet with canola oil spray. Place bread on baking sheet. Spray bread with canola oil spray and coat well. Sprinkle 1 tablespoon of grated parmesan cheese on bread. Sprinkle 1/2 teaspoon granulated garlic, 1/2 teaspoon Italian seasonings, and 1/2 teaspoon parsley. Bake till golden brown. 20-25 minutes. Serve at your Sunday Feast with House Red Wine and Marinara for dipping…

Rosemary, Onion, and Garlic Focaccia

The topping will change.

When dough is proofed:

plum tomatoes from can 5 with no juice

Parmesan grated cheese 1/8 cup

basil 1/2 teaspoon

oregano 1/2 teaspoon

salt and pepper for taste

olive oil 1 tablespoon

parsley 1 teaspoon

Italian seasonings 1/2 teaspoon

garlic salt 1/2 teaspoon

granulated garlic 1/2 teaspoon

grated mozzarella cheese 1/8 cup

When dough is proofed, rub with Olive oil. Sprinkle all seasonings on top of Focaccia. Spread out plum tomatoes evenly on Focaccia. Bake at 375 degrees till top and bottom are brown. Enjoy, Jason

This is the same Pizza Dough recipe at Casaculinarian.com the link will be below. The Pizza’s are formed Smaller, Rustic, (uneven and not a perfect circle is ok) and Thicker. I spray the crust with Canola Spray and season with Parmesan Cheese, Parsley, Granulated Garlic, and Oregano. Then make your Pizza from there… Enjoy!

Lets start with the Pizza Dough:

Follow the recipe of the link below for Casaculinarian.com Pizza Dough. Cut dough into 2 balls so crust is ultra Crispy and Thin…

Always try to use high gluten flour if you can find it in the store….

Cut your dough in two. On a floured surface flatten dough ultra thin with a rolling-pin. Spray a cookie sheet or a pizza screen with cooking spray. Add thin dough. Spray dough with Canola cooking spray.

grated parmesan cheese 1 tablespoon sprinkled on dough

Italian seasonings 1 teaspoon sprinkled on dough

parsley 1 teaspoon sprinkled on dough

garlic salt 1/2 teaspoon sprinkled on dough

Example below.

Set oven for 425 degrees and when oven is ready cook until crispy. The dough will form bubbles when cooking, you must open the oven and put fork holes in the bubbles so the go down. When cooked Flat Bread should look like the example below.

Cut long ways down the middle and then two more cuts on the short side to make 6 rectangle slices.

Grilled Chicken Caesar Salad:

romaine lettuce washed 1/4 head cut and dried

croutons from the store 1/2 cup

Caesar dressing store 2-3 tablespoons

grated parmesan cheese 1 tablespoon

black pepper for taste

grilled chicken 1- 2 pieces cubed, see link below for low-fat boneless chicken breast

Basic Grilled or Seared Boneless Chicken Breast

double this recipe to make two pizza’s, I made a nice thin crust pizza for the kids with the other dough… If your from Bergen County NJ, this is like the Lido Pizza from Hackensack.

Pizza- Pizzets… Another Classic Appetizer for Super Bowl Sunday. Pizza is America’s favorite food, so why not give them what they want.

First lets start with my pizza dough, and pizza sauce recipe’s on Casaculinarian.com. Both links below.

Of course you can buy pizza dough and pizza sauce at the supermarket if you want to speed things up…

Pizzets:

Pre-heat oven to 400 degrees. I will spin my pizza dough as if it is a normal pie, on a floured surface. With a 2 inch biscuit cutter cut small holes close to each other throughout the entire pizza dough. Both examples below.

Spray a pizza screen with baking spray or a cookie sheet. Lay out your Pizzets Dough. Add a spoon of pizza sauce on each one, and then top with shredded mozzarella cheese. Top Pizzets with whatever topping you choose. Example below.

If using pizza screen like I am in the above picture, place a pizza pan on the bottom rack of your oven to catch any melted cheese. Place your Pizzets on the top shelf. Cook till golden crust. 7-10 minutes. Let cool for 2 minutes than place them on a serving dish. They wont last long. Enjoy, Jason.

Rosemary, Onion, and Garlic Focaccia

Last night I said I was going to make Homemade Dinner Rolls with our Soup and Salad for Dinner… I couldn’t sleep well- I think the menu didn’t sit well with me. So at 4:00 AM tossing and turning in bed I decided some Homemade Focaccia will compliment the Veal Milanese over Salad and Manhattan Clam Chowder better… I finally got to bed, so here it is.

Casaculinarian.com pizza dough recipe. Link below. I suggest using High Gluten Flour if possible.

Pizza Dough for Home

olive oil 1/2 cup

fresh rosemary sprigs 2 tablespoons

salt and pepper taste

grated parmesan cheese 1/8 cup

onion 1/2 julienned

garlic 3 bulbs sliced

Italian seasonings 1 tablespoons

parsley 1 tablespoon

granulated garlic salt 1 teaspoon

 On a Sicilian pan or cookie sheet add olive oil and spread out evenly  on pan. Place dough after it is ready on the pan. Spread out like a round thick pizza, so its still 1 inch thick. With a pastry brush add olive oil to top of dough. Use a fork and poke holes all over top of dough. Cover with plastic wrap and place in you oven for 3-4 hours. Do not turn oven on. The dough will proof and double in side.

Take dough out of oven and turn oven on 400 degrees. In a sauté pan add 1 tablespoon of olive oil and sauté onions and garlic. Brown the onions and garlic but do not burn. Season Focaccia with all seasonings and herbs. Add onions and garlic to top. Example below.

Cook on 400 degrees and before it browns add more olive oil with a pastry brush. Finish in the oven till golden brown. (olive oil may not be completely used.) Enjoy! You can use this for sandwiches or as a side.
