cleaned chicken breasts cut into thin slices- 4 pounds

all-purpose flour- 1 cup

salt and pepper for taste

In a large bowl cut your chicken into thin slices. Season with salt and pepper. Dredge with flour.

oriental steamed vegetables in a bag- frozen department

2 cups chicken stock

2 teaspoons low sodium soy sauce

garlic chopped- 1 teaspoon

olive oil- 1/4 cup

fresh Lo Mein packet- produce department

Cook Lo Mein for 3 minutes on high heat and drain. Rinse with cold water and oil slightly. Place the stove top on medium heat, in a large sauté pan add oil and wait for it to get hot. Add dredged chicken and brown both sides. Discard most of the oil leaving a bit to sauté. Add garlic. Place steamed vegetables in microwave for 1 minute and add to skillet, before garlic burns add soy sauce to

de-glaze. Add chicken stock and lower heat to simmer. Add cooked Lo Mein and mix well. Enjoy your quick and Easy Dinner!!! Jason

This can be a quick dinner if you have Tomato Basil Sauce already done or you use your favorite jar sauce…

tomato basil sauce or your favorite jarred sauce 24 oz. link below for Casaculinarian.com tomato basil sauce

beef chop meat 80/20 1/2 pound

garlic 1 teaspoon

white wine 2 oz.

shredded mozzarella cheese 1/2 cup

parmesan cheese 2 teaspoons

fresh basil for garnish 3 leave chopped course

rigatoni past 1 pound

salt and pepper for taste

Tomato Basil Sauce

Place your stove top on medium heat and add a large sauté pan. Add a large pot with salted water to cook your pasta, also on medium heat…

Add chop meat to sauté pan and start to brown. Season with salt and pepper for taste. Add garlic and when meat is all cooked and broken up add your white wine. Add 12 oz. of tomato basil sauce and lower heat and simmer.

Cook your pasta al dente. Drain and oil. do not shock with cold water.

In a glass baking pan add 6 oz. of tomato basil sauce to the bottom of the dish. Mix your rigatoni in the meat sauce add to the top of the sauce in the baking dish. Add remainder of sauce, parmesan and mozzarella cheese to the top. Bake at 325 degrees for 15 minutes. Take out and garnish with fresh basil. Enjoy, Jason!

Wing Night…

Its been a busy week, we have been out every night… So It’s Wing Night. We made a few different type of Wings but this one has not been on out site…

raw wing segments 12 pieces (6 whole wings cut)

salt and pepper for taste on the raw wings and flour mixture

all-purpose flour 3/4 cup

cayenne pepper 1 teaspoon

creole seasoning 1 tablespoon

paprika 1 teaspoon

onion powder 1/2 teaspoon

granulated garlic 1/2 teaspoon

Cut and rinse your raw wings and let them dry. Season them with salt and pepper for taste. Flour mixture, add flour to a bowl. Add all seasonings and sift flour so all seasonings spread equally. Place your seasoned chicken wings in flour and dredge them. In a Deep Fryer on 365 degrees cook until internal temperature is 165 degrees. This recipe gives you a nice bite without the mess of the sauce. I prefer the mess… Enjoy, Jason.

This is another one of those Quick and Easy recipes for busy nights with the kids…

pork chops 6

olive oil 3 tablespoons

salt and pepper for taste

granulated garlic 1/2 teaspoon

onion powder 1/2 teaspoon

Place your pork chops in a large bowl. Brush both sides with olive oil. Season both sides with seasonings. Let marinate for 30 minutes.

Teriyaki mixture:

4 tablespoons teriyaki glaze

1 teaspoon low sodium soy sauce

chopped parsley or scallion for garnish 1 tablespoon

Mix teriyaki glaze with soy sauce. Place outdoor grill on medium heat. Grill pork chops turning sides as they cook. Well done pork should be cooked to 165 degrees. When pork reaches 155 degrees start basting pork chops on both sides with sauce. Brown the chops without burning them. Continue to baste and turn till they reach 165 internal degrees. Place on a platter and garnish with parsley or scallion. Enjoy, Jason

This one is quick and easy and can me completely homemade or all store-bought. This will go under the quick and easy category, so we will recipe it with store-bought items. If you want to make this homemade all recipe links will be at the bottom of the page.

flour tortilla 7  inch- 2

shredded mozzarella cheese- 6 oz.

tomato sauce- 3 oz.

frozen small Italian meatballs- 8 cut in half

cooking spray

butter 1 teaspoon

Cook meatballs and cut them in half. On the stove warm tomato sauce. On a flat griddle place on 325 degrees. Spray with cooking spray lightly. Melt butter on hot cooking surface, and place both tortilla shells on the griddle. Add Equal parts of cheese first, and then sauce & meatballs on both tortilla shells evenly. After 2 minutes place one on top of the other. Lower griddle to 300 degrees. Use a 6 inch plate for weight and add to the top for one minutes. Then flip quesadillas and repeat. Take it off the griddle and cut it into 4 triangles. Enjoy! Jason.

Sweet and Sour Chicken Kabobs with “Marinated Chicken Chunks, Pineapple, Onion, and Red Bell Peppers”

our featured dinner for the night staying with the pineapple theme. Matt had Karate tonight, so this is a “quick and easy dinner with short-cuts”…

White Rice:

par-boiled rice 1 and 1/2 cups

water 3 cups

olive oil 2 tablespoons (to help it bind like sticky rice)

salt and pepper for taste

onion powder 1/2 teaspoon

granulated garlic 1/2 teaspoon.

On medium heat add all ingredients. Bring to a boil. Place heat to low and cover. Simmer for 20 minutes or until rice is ready. Keep covered.

Sweet and Sour Chicken Kabobs:

boneless chicken breasts trimmed and washed and cut into 1 inch squares

red bell pepper 2 cubed large

onion 1 cubed large

pineapple wedges 1/4 pineapple

olive oil 2 tablespoons

salt and pepper for taste

teriyaki sauce 1 teaspoon

soy sauce 1 teaspoon.

Cut chicken into chunks and marinate it with the above seasonings for 15 minutes. Leave vegetables and pineapple for building kabobs later.

After 15 minutes add half of package of Campbell’s Sweet and Sour Skillet seasonings. (Only for Quick Dinner Nights…)

save the other half in the refrigerate for future use.. Let marinate for 10 more minutes…

Make your Kabobs on 10 skewers to your liking, and grill on medium heat. While turning them, use a pastry brush to continue adding sauce to them while cooking. Cook until internal temperature of chicken is 165 degrees. Enjoy, Jason

Pork Roast in the Crock Pot

Pork Roast in the Crock Pot

for nights you are busy with the kids… Feeds 4-6 people

pork loin 1 and 3/4 to 2 pounds

salt and pepper for taste

water 1 cup

beef bouillon cube 1

soy sauce 1 teaspoon

teriyaki sauce 1 teaspoon

paprika 1 teaspoon

garlic powder 1/2 teaspoon

olive oil 1 teaspoon

In a Crock Pot set on high for 4 hours, place pork on bottom. Add water around the pork. Add olive oil, soy sauce, teriyaki sauce, and seasonings over the pork loin. Fat side up. Place beef bouillon cube in the water. Cover. Set it and forget it. The nice thing about this recipe on high, is it will not make Pulled Pork out of the loin. I was able to cut it and place it on Au Jus. See pictures on bottom. Serve with Jasmine rice and vegetable. Enjoy, Jason.

Crock Pot Pepper Steak

Still worn out from getting home Friday night at 1:30 AM… We are not used to late nights anymore. LOL.

This is a spin on a Classic Pepper Steak. We used stew meat (chuck) and let the Crock Pot do all the work…

stew meat cut in 1 inch strips 1 and 1/2 pounds

red bell pepper sliced

onion 1/2 sliced

garlic 1 teaspoon chopped

scallion 2 chopped

teriyaki sauce 1 tablespoon

soy sauce 1 tablespoon

salt and pepper for taste

onion powder 1/2 teaspoon

Place all ingredient’s in the Crock Pot, set on fast for 4 hours.

Serve over white rice. Feeds 4-5 people.

Crock Pot Sausage Soup for Dinner

 

italian sausage and kale

  sweet Italian sausage out of casing 1 pound
onion 1 small finely chopped
carrots 2 peeled and diced
shallot 1 finely chopped
garlic 2 cloves minced
chicken broth 3 cups
potatoes cubed 1 cup
beef broth 2 cups
fresh chopped parsley 1 teaspoon
juice of one lemon
dry sage 1/4 teaspoon
kale 1/2  head cleaned and chopped
salt & pepper for taste
hand shredded Parmesan Cheese for garnish

In large frying pan brown and crumble sausage. Remove sausage and sauté onions, carrots, and garlic in drippings. Add chopped kale to wilt quickly. Add all cooked ingredients to the crock pot. Add lemon juice, chicken broth, beef broth, potatoes, and seasonings. Cover and set on low for 4-5 hours. Garnish with fresh grated Parmesan cheese. Enjoy with a big Crusty piece of French Bread, Jason.

Easter Crock Pot Ham

Crock Pot Ham- Set it and forget it!

Ham bone in 5-7 pounds

pineapple rings 4

pineapple juice 1 cup

brown sugar 1/2 cup

cloves 8

maple syrup 1/8 cup

In a large Crock Pot add pineapple juice and maple syrup to the bottom. Place your Ham on top of the liquids. Place 8 cloves in your Ham.  Sprinkle brown sugar on top of the ham. Place 4 pineapple rings on top of the ham using the cloves to hold them in place. Turn Crock Pot on low for 6-8 hours. Use a baster and baste the Ham every hour. Set it and forget it! Enjoy, Jason.
