Sometimes you must have a Classic for the Adults and Kids. Lasted about 3 minutes…

Lay out your Croissant dough and make cuts with a pizza cutter or knife. Example below.

Roll them up and Bake them at 375 degrees till Golden… Serve with Spicy Mustard.

Or buy French Bread from the store.

Brie Cheese 1 wedge from the store

apricot preserves spooned on top of Brie Cheese

brown sugar sprinkled on top of Brie Cheese and apricot preserves

In a glass pie pan place your Brie cheese, coat the top with apricot preserves, then sprinkle with brown sugar. Example below.  No measurements because cheese varies in size just guide yourself from example below.

Baked Brie

In a sauté pan add 2 tablespoon of butter, 1 apple sliced, and one pear sliced. Sauté the fruit golden. Deglaze with 2 oz. of Brandy. Let the Brandy burn off for one minute. Add 3 oz. Heavy Cream.  Add salt and pepper for taste. Add 1/4 teaspoon of cinnamon and 1/4 teaspoon nutmeg. Reduce for 1- 2 minutes… Place sauce on bottom of serving plate. Move Fruit to the side closest to you. Place your cooked Brie in the center. Cut crusty French bread on the outside. Enjoy!

Classic Potato Skins


Potato Skins

Loaded Potato Skins- Great Super Bowl Party Food. Two kinds but neither are healthy:) Healthy foods coming next week… This recipe is for small gathering with multiple Appetizers… You want them to be gone and move to your next dish. That’s how they start to talk about your recipes… They want to come back for it!

Classic Potato Skins:

russet potatoes 4 washed and dried

canola cooking spray for coating potatoes

salt and pepper for taste

butter 2 tablespoons melted

shredded cheddar cheese 16 oz.

bacon cooked and chopped 3/4 pound

green onion 1 sliced

chives 6 chopped

Rinse and clean your potatoes and place them on a baking pan. Spray both sides with canola cooking spray. Season both sides with salt and pepper for taste. Cook for 30-45 minutes on 350 degrees. If the potatoes are small to average 30 minutes, large 45 minutes.

Take the potatoes out and let them cool for 10 minutes. Melt your butter in the microwave.  Cut your potatoes in half length wise. Place skin down. With a ice cream spoon scoop out the guts of the potato. Use these scooped potatoes in another food applications.

With  a pastry brush coat both sides of potatoes with the melted butter and place back in the oven for 12 minutes. At the 6 minute mark flip potatoes over.

When this is completed take out of the oven. Place potatoes skin down again. Fill the potatoes with shredded cheddar cheese. Top with cooked chopped bacon. I added some blanched broccoli to half of my potatoes. Add another layer of cheese. 16 oz. of shredded cheddar is more than enough cheese. I didn’t use all of it, had a couple ounces left. Place back in the oven till cheese is fully melted, take out and serve on a serving plate and garnish with chives and scallions…

Super Bowl Highlighted foods for today. This is a simple winner….

Boneless Buffalo Chicken Chunks

raw boneless breasts of chicken 2 (makes roughly 20 bites)

flour 1/2 cup

seasoned salt 1 teaspoon

parsley 1/2 teaspoon

onion powder 1/2 teaspoon

granulated garlic 1/2 teaspoon

salt and pepper for taste on raw chicken chunks and for flour mixture

Cut your boneless chicken breast in chunks around an inch and a half. Season with salt and pepper for taste.

Flour Mixture:

Add your flour to a small mixing bowl. Then salt and pepper for taste. Add seasoned salt, parsley, onion powder, and granulated garlic. Sift well.

Buffalo Sauce:

Franks Red Hot Sauce 1/2 cup

butter 2 tablespoons

In a small pot on medium heat add ingredients and heat. Mix well and when butter is dissolved turn off.

Dredge chicken chunks in seasoned flour mixture. In a deep fryer on 350 degrees cook chicken till internal temperature is 165 degrees. Take chicken out and place on a plate with paper towel to drain oil. Add chicken to buffalo sauce in a mixing bowl and toss. Serve with tooth picks. Accompany with bleu cheese dressing and celery sticks. Enjoy Jason

Grilled Chicken Caesar Salad on Warm Flat Bread. (Pizza Dough very thin)

Lets start with the Pizza Dough:

Pizza Dough for Home

Always try to use high gluten flour if you can find it in the store….

Cut your dough in two. On a floured surface flatten dough ultra thin with a rolling-pin. Spray a cookie sheet or a pizza screen with cooking spray. Add thin dough. Spray dough with Canola cooking spray.

grated parmesan cheese 1 tablespoon sprinkled on dough

Italian seasonings 1 teaspoon sprinkled on dough

parsley 1 teaspoon sprinkled on dough

garlic salt 1/2 teaspoon sprinkled on dough

Example below.

Set oven for 425 degrees and when oven is ready cook until crispy. The dough will form bubbles when cooking, you must open the oven and put fork holes in the bubbles so the go down. When cooked Flat Bread should look like the example below.

Cut long ways down the middle and then two more cuts on the short side to make 6 rectangle slices.

Grilled Chicken Caesar Salad:

romaine lettuce washed 1/4 head cut and dried

croutons from the store 1/2 cup

Caesar dressing store 2-3 tablespoons

grated parmesan cheese 1 tablespoon

black pepper for taste

grilled chicken 1- 2 pieces cubed, see link below for low-fat boneless chicken breast

Basic Grilled or Seared Boneless Chicken Breast

double this recipe to make two pizza’s, I made a nice thin crust pizza for the kids with the other dough… If your from Bergen County NJ, this is like the Lido Pizza from Hackensack.

Homemade Hearty Beef Chili

Homemade Hearty Beef Chili- Perfect food for the Super Bowl this Sunday. Serve with grated Cheddar Cheese, Sour Cream, and diced White Onions on the side…

beef chop meat 2 and 1/2 pounds

olive oil 2 tablespoons

diced tomatoes can and liquid 28 oz.

crushed tomatoes can 28 oz.

water filled in a one 28 oz. empty can

beef bouillon cube 1

chicken bouillon cube 1

red kidney beans can 15.5 oz. drained

onion 1 small diced

green bell pepper 1 diced

red bell pepper 1 diced

fresh garlic bulbs 6 chopped

salt 1 tablespoon

pepper 1 teaspoon

cumin 2 tablespoons

chili powder 2 tablespoons

crushed red pepper 1 tablespoon

onion powder 1 teaspoon

granulated garlic 1/2 teaspoon

fresh or dry cilantro 1 tablespoon

paprika 1 teaspoon

Sazon Con Azafran 1 package

In a large Soup Pot brown off all the chop meat and drain. Add olive oil and chopped onion, both peppers, and garlic. Sauté for a few minutes and before they brown add back the drained chop meat. Continue to brown chop meat, onions, garlic, and peppers. Add all your seasonings to the meat mixture. Add both cans of tomatoes, can of water, and bouillon cubes. Bring to a boil. Lower and simmer on low heat for 1 and 1/2 to 2 hours. When liquid reduces and your happy with the consistency and flavor, add drained kidney beans. Let simmer for ten more minutes. Serve. Good Thursday morning from Casaculinarian.com. As we are only a day away from our Friday Cocktail Hour, I first wanted to share some themed Super Bowl Cocktails I found on the Web. These are not my recipes or my images… Three full days left before Sunday to get ready for your Super Bowl Party!

Mile High Martini’s

The Mile High Martini (Denver Broncos)

Serves 1

Note: DOSA’s lead bartender, Chris Lukens, makes his spiced agave syrup by bringing agave syrup, green cardamom, cloves, star anise, cinnamon and sliced bird’s eye chiles to a simmer. Turn off heat, then cover and let steep to desired level of spiciness. Strain and cool completely before using.

1 1/2 ounces Leopold’s Colorado gin

1/2 ounce creme de peche

1/2 ounce housemade spiced agave syrup

1/2 ounce fresh lime juice

1/4 ounce creme de ginger

3 dashes Thai bird’s eye chile tincture

Lime peel, to garnish

Add all the ingredients, except the lime peel, to a cocktail shaker filled with ice. Shake well, then double-strain into a large coupe. Garnish with lime peel.

Panther Punch

Serves 8 to 10

1 bottle Viniq Original

15 ounces Schweppes club soda

4 ounces tart sweet and sour mix

4 ounces Grand Marnier

Lemon wheels, to garnish

In a punch bowl, combine the Viniq, club soda, sweet and sour mix and Grand Marnier. Add ice chips and lemon wheels. Serve immediately.
