Skillet Artichoke and Spinach Dip

Skillet Artichoke and Spinach Dip is actually baked in a Cast Iron Skillet Pan surrounded by Small Homemade Cheesy Rolls to break off with the Dip… This one can possibly be your winner for your Super Bowl Party.

Baker Pippi found this on the Web some years back and is re-creating it for you.

Bread:

high gluten flour 3 cups (if you can not find high gluten you can use all-purpose)

salt 1 and 1/2 teaspoon

fast active yeast 2 and 1/2 teaspoon

milk warm 1 to 1 and 1/4 cup (microwave)

olive oil 2 tablespoons

In a Kitchen Aid using the dough hook add all the flour, salt, and olive oil. Place your yeast in a small bowl with 1/2 teaspoon of warm water to activate it. Make a slush. Add the yeast to the bowl. Pour half of cup of warm milk in the bowl and turn mixer on low, add next half a cup of milk and turn speed to medium. You should only need one cup of milk. If the mixture is too dry add a little milk at a time till the dough comes off the sides of the bowl. Form a ball with the dough and cover it with a warm wet paper towel to proof for one hour.

Spinach and Artichoke Mixture:

fresh baby spinach 4 cups

artichoke hearts can 14.5 oz. drained and chopped

cream cheese 4 oz.

sour cream 1/2 cup

mayonnaise 1/4 cup

fresh chopped garlic 1 bulb

grated parmesan cheese 1/4 cup

shredded mozzarella cheese 1/4 cup

salt and pepper for taste

more shredded mozzarella cheese to finish the bread later 1/4 cup

In a large mixing bowl, drain the artichoke hearts and chop them, add to the bowl. Sauté the baby spinach on the stove lightly- add 2 tablespoons of water to help break the spinach down.  Add to the mixing bowl. When the spinach cools off add the rest of the ingredients and mix well. Set aside.

Skillet:

butter 2 tablespoon melted

Back to the proofed dough. After 1 hour when the dough has doubled in size, take out of the bowl and place on a floured cooking surface. Roll the dough out into a long log about 15 inches long. Make 16 even cuts and roll each cut into a ball. Add your melted butter to the bottom of the skillet. Add your 16 balls around the outside of the skillet pan, touching the side walls. With a pastry brush coat the top of the balls with the butter that moved to center of the pan. Cover with plastic wrap and let the balls rise for 45 minutes. Uncover and pour the dip mixture in the center of the pan. Heat oven to 350 degrees. Place in the oven for 30 minutes. When 30 minutes is over sprinkle the remaining mozzarella cheese over the rolls and place back in the oven on broil for 2 minutes. Enjoy!

Pizza- Pizzets… Another Classic Appetizer for Super Bowl Sunday. Pizza is America’s favorite food, so why not give them what they want.

First lets start with my pizza dough, and pizza sauce recipe’s on Casaculinarian.com. Both links below.

Of course you can buy pizza dough and pizza sauce at the supermarket if you want to speed things up…

Pizzets:

Pre-heat oven to 400 degrees. I will spin my pizza dough as if it is a normal pie, on a floured surface. With a 2 inch biscuit cutter cut small holes close to each other throughout the entire pizza dough. Both examples below.

Spray a pizza screen with baking spray or a cookie sheet. Lay out your Pizzets Dough. Add a spoon of pizza sauce on each one, and then top with shredded mozzarella cheese. Top Pizzets with whatever topping you choose. Example below.

If using pizza screen like I am in the above picture, place a pizza pan on the bottom rack of your oven to catch any melted cheese. Place your Pizzets on the top shelf. Cook till golden crust. 7-10 minutes. Let cool for 2 minutes than place them on a serving dish. They wont last long. Enjoy, Jason.

Cocktail Meatballs in the Crock Pot

Cocktail Meatballs for the Super Bowl. Three ingredients and the Crock Pot does all the work…

frozen all beef meatballs 32 oz.

(If you have time and want to make a great mini meatball, I will attach the link for my Italian Wedding Soup. Use that recipe.)

jellied cranberry sauce can 14 oz.

bottle of chili sauce 12 oz.

Put all ingredients in Crock Pot on fast for 3 hours, and serve.

Sloppy Joe Pulled Pork Sliders

This recipe is so easy. I would definitely suggest this for busy parents on the run, quick Crock Pot meals…

This is also our Super Bowl feature food of the day.

You can not have a tailgate party without Pulled Pork? This recipe will easily make 12-15 sliders. Traditionally you would use Pork Butt, but not in this recipe.

pork tenderloin 1

sloppy joe can of sauce 14.5 oz.

water 1/8 cup

salt and pepper to taste

Franks Red Hot Sauce 1-2 tablespoons, depending on your like for spice.

Package of Slider Rolls. Hawaiian Sweet Rolls are great or Potato Rolls. Set it and forget it.

Place the above ingredients in Crock Pot on fast setting for 4 hours. At the 3 and 1/2 hour mark, use a fork and pull pork so it breaks up and soaks in the sauce… Yummy and so easy!

Oven Baked Disco Fries

This is an old favorite… Good old Diner Food. We are attempting to make this dish as low in fat as possible. You certainly do not have to. The options will be there for you.

This recipe can be made for around $5.00 bucks if you shop smart.

crinkle cut frozen French fries 32 oz. package

low sodium brown gravy mix dry  .87 oz. or can low sodium brown gravy 14.5 oz. (you can substitute original brown gravy)

low fat skim milk mozzarella cheese 1 and 1/2 cups shredded (mozzarella option, whole milk mozzarella)

salt and pepper to taste

season salt to taste

canola oil cooking spray

On a baking pan spray wax paper with canola oil cooking spray. Then add bag of fries and spread out evenly. Coat fries with canola cooking spray. Season fries with salt, pepper, and season salt for taste. Cook at 400 degrees until they start to brown. Take out of oven. Example below.

In a small soup pot on medium heat make your gravy. Follow instructions on envelope or heat can gravy. Pour over fries evenly, example below.

Add mozzarella cheese to the top. Leave outside fries without cheese so when finished cheese stays on the wax paper. You want to remove them easily for a serving dish. Example below.

Place back in the oven at 425 degrees for 7 minutes. Turn oven on broil for 3 minutes. Keep the fries on bottom rack so wax paper does not burn. Take out of the oven and transfer to a serving dish. This will probably be the simplest and most enjoyable dish you make for the game. Enjoy, Jason.

Rice Krispies S’mores Pinwheel

Baker Pippi’s delicious treats can also join your Super Bowl menu.

Traditional Rice Krispies Treats:

butter 3 tablespoons

mini marshmallows 4 cups

Rice Krispies 6 cups

In a large saucepan on low to medium heat melt the marshmallows and butter until all ingredients are completely melted.

Take off of the stove and with a rubber spatula add Rice Krispies and stir until they are completely covered.

Add mixture to wax paper and spread out so they are only 3/4 inch in height.

Topping-

Fluff 1 and 1/2 cup

graham crackers put in a food processor 1 cup

chocolate chips 1 cup

Layer the Fluff on top of the Rice Krispies Treats. Sprinkle the processed graham crackers over the Fluff. Sprinkle the chocolate chips over the top. Place in the oven on 200 degrees for ten minutes. When you take them out use a rubber spatula and spread chocolate out. Two examples below, before the oven and after the chocolate is spread.

Roll short side up into a log and refrigerate for ten minutes for them to set. Cut into bars. Thanks Baker Pippi

Buffalo and Ranch Chicken Wings

This is a great spin on the typical Buffalo Wing. With the Super Bowl around the corner Casaculinarian.com will be featuring 1 Super Bowl Recipe a day thru Saturday, Enjoy!

Wing Sauce- for 2 Dozen Wings

Franks Red Hot Sauce 1 cup

Ranch dressing 1/2 cup

butter 4 tablespoons

white vinegar 1 tablespoon

In small pot on medium heat add Franks Hot sauce, butter, and vinegar. With whisk blend together when butter starts to melt. Take off the stove and let rest for 5 minutes. Then whisk the ranch dressing into the hot sauce.

Wings-

Season chicken wing sections with salt and pepper for taste. Deep Fry at 350 degrees till internal temperature is 165 degrees. Add to a mixing bowl and pour wing sauce over the hot wings and toss. Yummy!!! Serve with Bleu Cheese Dressing and Celery Sticks.

Big Foot Bread

Big Foot Bread

Ok so most call this Monkey Bread or Gorilla Bread. My little Lula has the peanut allergy so we had to make it safe for Casaculinarians home. Baker Pippi likes Cinnamon, so these are the basic changes without Nuts… Its Fantastic and Easy… Enjoy, Jason

sugar 1/2 cup

cinnamon 4 teaspoons

butter 1 stick (1/2 cup)

brown sugar packed 1 cup

cream cheese one 8 oz. package

regular refrigerated biscuits two 12 oz. packs

Use a Bundt pan and spray with baking spray. In a small mixing bowl, mix sugar, and cinnamon. Melt butter and brown sugar in pan on low heat, stirring well. Let cool. Cut cream cheese into small squares 15-20. Pack each biscuit pressing down with your fingers with a square of cream cheese in the middle being closed with your fingers surrounded by biscuit.  Put half of the biscuits in the bundt pan. Pour half of the sugar mixture on top, and then half of the butter mixture over that. Now place the rest of the biscuits on top sealing all gaps.  Sprinkle with the rest of sugar mixture and then add melted butter and brown sugar. Cook at 350 degrees for 30 minutes. Let cool for 5 minutes than flip dessert over on a plate. Big Foot time!

Crock Pot Simple Swedish Meatballs

This is not by any means an Authentic Swedish Meatball Recipe. This files under Fast Crock Pot Meals for family’s on the run during the week with there kids… 2 Parts.

Sauce:

beef broth 1 can 14.5 oz.

heavy cream 1 cup

Worcestershire sauce 1 teaspoon

granulated garlic 1/2 teaspoon

parsley 1 teaspoon

pepper 1/2 teaspoon

In a Crock Pot add all ingredients and place warmer on fast for 3 hours.

Meatballs:

beef chop meat 1 pound (Traditionally its mixed with beef and pork, I am only using beef)

Lipton Onion Soup Mix 1 envelope

allspice 1/2 teaspoon

nutmeg 1/2 teaspoon

egg 1

bread crumbs 1/4 cup

pepper taste

granulated garlic 1/2 teaspoon

flour for coating meatballs 1/4 cup

Place chop meat in a mixing bowl. Add cracked egg, envelope of Lipton Soup Mix, bread crumbs, spices, and seasonings. No salt added to both recipe’s because the Lipton Soup Mix will add plenty. Mix well by hand and form meatballs 1 inch in diameter. Coat each meatball with flour. Roll them gently on a floured plate. Example in the above picture. This flour will act as the roux and will help thicken the sauce. Every hour stir meatballs around to dissolve the flour. Serve over Egg Noodles. This Rocked the House tonight, so easy, Enjoy!

Steak Quesadilla with Smoked Mozzarella

Chef Powers recipe of the week. Chef Powers makes some of the greatest and more interesting Sandwiches of any of the Chef’s I personally know. He’s very creative and this weekly recipe will be a main attraction on my blog…

Dinner for Two:

olive oil 3 tablespoons

fresh garlic cloves 4 minced

onion small diced

red bell pepper julienned

white mushrooms 4-5 sliced

top round steak 6-8 oz.

fresh smoked mozzarella sliced 8 oz.

sundried tomatoes cooked 1 cup julienned

basil leaves 4 chiffonade

2 flour tortilla shells (largest you can buy in supermarket)

salt and pepper taste

Lets start with searing off our steak and letting it rest. Add 1 tablespoon of olive oil to a sauté pan on medium heat. Season your steak with salt and pepper. Because the steak is only 8 oz. it is pretty thin. Sear both sides until all the red is gone and steak is browned. Set aside. Add 1 tablespoon of olive oil to the sauté pan and all your garlic, peppers, onions, mushrooms, and sundried tomatoes. Sauté them until they are tender. Example below.

Time to cut the steak into strips. Add remaining olive oil to sauté pan on low-medium heat and place your flour tortilla shell down. We do not want to burn it so be safe and cook on low. Add all ingredients to the shell and spread out evenly. Add other tortilla shell to the top. Cook on both sides golden brown 3-5 minutes on each side. Slice into eight slices like a pizza. Serve with marinara for dipping sauce. Thank you Chef Powers!
